I would be inclined to say just use more "meaty" mushrooms (such as shiitake or portabello), but I wouldn't trust that to the slow cooker. Especially since the slow cooker is used mainly to tenderize the meat.

I'm trying the Weight Watchers diet because I got a huge discount through Greg's insurance co. It's been great! :) I've lost 7.5 lbs so far, and I'm so happy to get all this pregnancy/baby weight off! :) I'm now at the weight I was pre-Violet, but am working towards a healthier weight. If you guys are interested, you should check to see if Alex's insurance (or yours) covers it. The online tools are so great (and never go down)! :)

Hi Koriann - if you want a more "korean" tasting one - you'll need to add a few more ingredients - like garlic, sesame oil, perhaps a dash of sake/mirin. I have a post on korean short ribs braised on my website - you could possibly just borrow that marinade and put it in the crock pot with the ribs? (I'm not a crock pot cookies so I have no idea.)

When I am in a pinch and I have to use canned enchilada sauce, I like to doctor it up a little bit by toasting 1 or 2 unpeeled cloves of garlic on a hot griddle for about 5 or 6 minutes. Then I whirl them in the blender with the enchilada sauce.
BTW, do you like green tomatillo enchiladas? If your in the mood for cooking up a storm, then check out my recipe. To make it quick, perhaps you can substitute some storebought rotisserie chicken instead.
